Would that not lead to increased stress, less exercise, a general listlessness and at least a couple, if not all, of the symptoms listed above?

I think your bird should be taken to a vet ASAP and this should have been the first response from the breeder - stinky poo is not a trifiling matter - but clippnig the wings *could* have been a major contributor to the symptoms listed IMO - that is a decrease in immune response due to increased stress and decreased exercise.
