You can use chunks of carrot and apple on a skewer some will like chewing on them that way. You can also try making a salad using both veggies and some fruit mixed together. Have you tried many varieties of fruit? Some seem to like mango better or papaya. We have one that just loves pears. Fruit should only make up a small portion of their diet maybe 10-15% so if they won't accept any fruit I wouldn't worry as much about it. You could also try some of the dried fruit (make sure it is dried/dehydrated naturally not with lots of chemicals). Some birds seem to enjoy the more rubbery or crunchy textures of the dried fruits. I believe it was Nancy (sorry if I'm wrong I didn't look back to check the correct name) that put on a recipe using a microwaved sweet potato with some cinnamon and orange juice mashed together that a lot of birds seem to love.
