In regards to boiling the eggshells, thoroughly cooking the birdy bread mixture should kill off any salmonella bacteria just as surely as boiling the shells... Just make sure that the center of the bread isn't "sticky" / moist by using the "toothpick test". The only possible problem with salmonella would be from undercooked bread (and therefore undercooked egg products).
