You might want to stop feeding her cottage cheese, there are plenty of other things you can feed her. From what I understand, dairy isn't digested by birds, which can upset their system. I think yogurt is ok, but I'm not sure about anything else.
It sounds like she's settled in pretty well and has bonded with you. One thing you can do to try to stop the egg-laying is cutting her light to about 10-11 hours. They are very sensitive to the amount of light they get in a day, which can trigger "breeding mode", no matter that she has no mate. You can get her a sleeping cage (great idea) to put in an out of the way room where she can go at night to have quiet and darkness. The cage doesn't have to be big since she will only be staying in it overnight to sleep. I would also recommend a cage cover, which can be a sheet, light blanket, or something you buy for the cage. If you do limit her daily light it should help quell her need to breed.
