Jiffy Cornbread mix
1 egg with shell
1/3 cup of veggie stock (instead of the milk)
and then add any veggies chopped up you little heart desires!

For Mini-Muffins, cook @ 400 degrees for 13 minutes, let cool 10 minutes, and then VIOLA!! Birdie heaven! Hope you have as good a result as we did!

Depends on your freezer, ours is really cold and keeps things a while.

We use the same things you did, only when I make the I use a small jar of baby food (fruit or veggie) and then add whatever. I sometimes make loaves or I have a muffin tin that makes 12 almost regular size (little smaller) muffins.

Ok i'll try again - this time with the Corn-meal [does anyone know if non-jiffy corn meal will cook the same?] I'll be buying some Organic Corn meal i think - saw they had some. Thanks for the recipe & i remember Sarah's suggestion too.

The cup-cake or muffin paper can be made from unbleached parchment - if you want to try that.

[For anyone who doesn't know about Teflon: is that a teflon muffin tin - it looks like the one we got rid of ... if it is, 400 is too hot & is hot enough to release the toxic fumes they talk about] - as nothing bad happened i'm assuming it wasn't.
