Pancakes!!!

When pancake days comes around at our house, we do not hesitate to share with the fids. Our family has severe food allergies and we cannot have foods containing gluten, dairy, soy, or corn. So - everything we make has to be extra special and most things in our house that are edible are homemade (especially breads, pies, cookies, cakes, fudge, brownies, hard candies and even marshmallows!...can you tell I have a sweet tooth?) Our pancakes are either made from rice flour or garbanzo bean flour and they are not starchy or fattening like most bready foods usually are. We put fruit (like bananas) in the mix to sweeten and everyone loves them, including the birds! This morning we had banana pancakes and apple slices and then everyone had a bath.

yummy! my ex should move in with you! He's got Celiac so he can't have wheat & gluten, plus he's allergic to corn and other acidic foods like tomatos.

Beutiful pics!!! But um, well, it's 10:30AM Sunday morning, and I'm starving and now I'm craving these pancakes and you didn't print the recipe!! This is verging on torture!! :P

1 1/4 Cup gluten free flour, I was using "Namaste" brand (which is mostly brown rice flour, tapioca, and arrowroot, powdered rice milk)
2 tablespoons olive oil
1 cup almond milk, rice milk or cows milk
2 eggs
1 tablespoon cinnamon
1 mashed banana
1 1/2 teaspoons vanilla extract

Mix all ingredients and fry in sprayed cast iron pan or SS pan.
