She's biting because she's territorial. She's protecting her precious little egg! :icon_smil
I agree that it's not fertile (unless she does some late-night sneeking!). As far as what to do, just leave it there until she loses interest. If you take the egg away, that'll serve as a trigger for her to lay more eggs and that could be detremental to her health (egg laying is very nutrient depleting). She'll probably sit on it and stay close to it for a week or two. Once she starts venturing away from it and allows you to reach into her cage without biting, then I'd say it's safe for you to discard the egg.
