Green Pans in Canada and using uncoated cookware

I have recently gave away all of my non stick pans. I am finding the change to regular pans a little challenging because I don't like cooking with a lot of added fats. I have noticed other members have been using Green pans. I am interested in buying some but I am not sure where to buy them. Does anyone know of a supplier in Canada or if there is a similar pan available in Canada.

I am interested to know how others cope with using uncoated pans for "sticky" things like eggs or pancakes? Can you suggest a brand of cookware available in Canada that is less sticky than others?
I owuld also like to purchase a contact grill (like the George Forman) but I noticed most have non stick coating. I assume they are not safe because of this?

I use a seasoned cast-iron pan for eggs and pancakes... There is no sticking. To me the cast-iron frying pans seem to cook better than the *thin* aluminum PTFE coated pans. Keep the heat a bit lower and use some oil (not cooking spray) to season the pan first.

I also use stainless steel for my other cooking - these pans do not require a lot of work to come clean (usually a bit of soaking and then a non-abrasive cleaner).

I have Wolfgang Puck stainless steel pots that I love. All I do is let them heat up before I use them, then turn the heat on a low setting and spray with cooking spray. Nothing ever sticks, and if something burns on I just put it on the stove on the lowest setting with soapy water for about a half hour and it comes right off.

so I am scarred from my experiences with copper bottom pans. Stainless steel isnt hard to clean, seriously??

Thanks everyone. I have stainless steel pots but I need a nice large pan. I gave away the newer Tefal one that I paid $50 for. I have my eye on a large steel pan with a heavy copper bottom. The copper is on the outside and steel on the inside. I wonder how well it will work out. I have never had any copper cookware. I may pick it up next week. Too bad about the Green pans being in the UK. I wanted to try them.

Dont get excited about the Green Pan. The reviews are coming in shakey and Ours is beginning to stick after just six months - The coating looks good but the food is sticking...ALLOT! We loved it at first....

wow, six months is not a long time for a pan to start breaking down. That's a shame. I decided to go with a line called earth chef. I believe it has some type of ceramic coating that is sort of non-stick. I am going to give that a try. Thanks for the help
