Glue is fine so long as the bird can't get to it and chew it off. You can also use stainless steel/nickel plated hardware.
You can find a list of safe and toxic woods here - be sure to read the notes! Bird; Birds: Safe, Toxic Trees, Woods. Safe Tree Wood. Parrots. Parrot cages. Cleaning, you can use soap and hot water, or a bit of diluted bleach, vinegar, etc. Be sure to rinse well and allow to dry.
