Fresh Muffins Any Time

Bobbie loves birdy bread cones, but only seems to eat them then they are fresh. Here a recipe I use (from weight watchers). Feel free to add additional stuff.

Anytime Muffins

1 box of cake mix (Carrot cake for example)
(preferably one with little sugar)
1 can of pumpkin
¼ cup of water

Mix together. Place in freezer bag and freeze until ready to use.
(This mixture doesn’t freeze solid-but more like stiff clay)

Pry off a portion, and mold to place in a mini cone or mini muffin paper.
Microwave for 25 seconds.
Cool and Serve

Fantastic - I'm definitely going to have to try this!

Silly Aussie question though, is there anything you can think of as a substitute for canned pumpkin? We can't get it here...having to blend and strain the pumpkin kind of takes the convenience out of a recipe like this.

hehehe i guess i'm not the only stupid aussie question asker her lol.could you put other things as well do u think like cocnut, special k(not regular k has to be special lol) or some dried fruit or would you have to add another egg or more water? maybe we could use banana instead cause i really dont wanna have to cook, strain and mush up a pumpkin.

I think bananas should be fine, they get to the same consistency. Sweet potatoes would work as well, I think.

I would think sweet potatoes would work. If you don't want to fuss, try baby food.
