Outlaw's zucchini cornbread

3 cups of self rising cornmeal mix
3 eggs, crushed shell and all
1 chopped small zucchini
2 tbs oil
2 c skim milk
1 c fresh cranberries
1/2 cup walnuts or pecans

Pre-heat oven to 425 degrees. I use a large size iron skillet, greased well. Place in oven. You could also use cupcake papers and a muffin tin. This would make two batches that way.

Mix all of the ingredients together as the skillet heats. Pour into the skillet and bake for approximately 20 minutes or until golden brown.

As I have to taste everything my guy is eating in an effort to get him to eat - I'll be leaving the eggshell out! Have you tried Apple juice instead of milk? I do whenever I have any & it is a great alternative.

Nice photo - are you preparing a bird cookbook? Looks nery professional.

Question on portion size for a mini-macaw

Will this recipe feeds all of your birds for one day, or just the morning meal?
Corina is fed once a day of her pellet and seed mix and is supplemented by things like veggies, pasta, fruit and fruit juice and whatever nuts I have around the kitchen (there are usually pine nuts, almonds, walnuts and at least one bag of pecans around our place at any given time). Since you have a Severe, I was curious to see how big a piece of this birdie bread your Severe usually ate at a given meal? I have a silicone mini-muffin pan that seems to work well if the cups are coated in vegetable oil first; would a couple of the mini-muffins be a good portion to give our Severe, or would it be too much or too little? I'm tryng to wean the bird off of a strictly pellet and seed diet (Roudybush) diet and I want to eliminate most of the sunflower seed if I can find something she enjoys just as much. Would you add any shredded yam or sweet potato to the mix to up the A and beta carotene content?
