Outlaw's Spinach Fritata

Since I have more eggs than Frank Perdue, I have to come up with creative meals for the fildren of **********. Here's what I made for them today and they all really liked it. You could substitute other dark green leafy stuff for the spinach. I just happened to have a thawed box of frozen chopped ready to go. Don't add the egg shells UNLESS you wash them and cook them first.

This was made for 10 larger parrots:

1 cup thawed chopped spinach
10 large eggs, beaten with 1/2 C water
1/4 C grated parmesan cheese

Into a very hot skillet, add enough olive oil to coat the surface. Add the eggs and then sprinkle in the chopped spinach evenly all over the eggs. I add cracked black pepper and even red pepper flakes at this time. Keep the mixture moving and once it starts to bind, flip it over and sprinkle with the parmesan. I actually didn't measure the cheese, so I just cover the surface.

Remove from the heat and allow it to cool before serving. If you have sliced whole grain bread, you can also chop some of that up and feed it along with the fritata.

i feed my birds eggs and spinach...but don't add the cheese...i'd always heard birds a lactose intolerant.

yes..

Birds are not lactose intolorant however they can only have little dairy daily because they have problems diguesting

I've tried this recipe - and Maia gobbles it all up- saying"mmmm" & "gooooood" the whole time. It's now a staple. Sometimes I throw in chunks of green and orange peppers.

Cheese loses lactose in the cheese-making process!! Hard cheese (not American which is mixed with milk) is fine for those of us who are lactose intolerant and for birds.
Nancy, great vegetarian recipe there!!! I'm impressed!!!

Crikey! You make that for your BIRDS? Just reading about it made my mouth water. If I come to your house, sit on a stand in the corner and shout inappropriate comments ... will you make one for me too?

I may have many shortcomings, but cooking isn't one of them. I like to cook and don't care who I'm cooking for. By all means, if in the neighborhood, stop in. Hell, I'll make you some ice cream once the peaches start locally.

I do something similar for my guys. I scramble 2 eggs and add chopped cilanto and sharp cheddar cheese. I put it in a tomatoe-basil wrap and cut it into pieces. Somtimes I just put the brown rice and broccli and cauliflower and cheese or chicken or whatever. If its in a wrap my guys love it!!

So, that recipe looks reallly good for birds and people.. MMMM

You know, some people say I'm weird for doing this, but sometimes I'll makes scrambled egges and add chopped starwberries and a starberrie nutri-grain bar. It's really good, and my birds like it too.
