Beak trimming should only be done by a certified avian vet--too many things could go wrong otherwise.
I have the same wing trimming issue with Apple-Jack. He is a very strong flier! The vet will be able to show you how short to take the wings. Remember that birds aren't mammals--God created them to fly. Even when they are clipped, they still will be able to fly to some extent, maybe just not as high. In order to make them not be able to fly, you would have to cut too many feathers too short, which isn't in the bird's best intrest. :)
