Question about male/female behavior of lovebirds

If you see the behavior of mating and one does the airplane look of spreaded wings and tail up- does that truly mean that one is a female? (Had the clicking noise too but the other one who mounted that one in the last week has been doing the clicking noise too) And when one mounts that one- does that truly mean that one is a male?

No that is not proof. Any combination of two (mf, mm, ff) can display mating behavior.

If a lovebird spread wings and tail up , I am sure that it is female. But I have no a certain behavior for male.
