I have two bonded pairs, senegals and CAG's i don't get this "will they still be pet quality" to be honest. I don't know/of anyone who's having problems with pairs/couples?!
As far as sex goes *i* haven't really noticed any difference in the birds i have/owned. If i were you i'd worry more about not having the amount of quality time to spend with each bird.. How does the Caique get along with the other birds? in my experience they're pretty much incompatible with everything with wings :(

If your contemplating 2 I would get same sex personally. I like to avoid having to deal with destroying and stealing eggs, there's enough good breeders out there an birds that need good homes. Pi's are pretty good with other species, but your caique will probably go after your pi, the greencheek might too because they thing they're bigger than they are. Why not just start with one, see how it goes, but don't do it expecting everyone will be one happy family, when people say Pi's are good with other birds, it means they stay out of their hair, mind their own business (usually) not that they will get along well with birds that are aggressive towards them.

That's the biggest problem I have in my house. Most of the birds prefer to mind their own business. Except the Green Cheek. He goes after everyone else :(
