I have only experinced one quaker in my life and that was a female. She was one of the sweetest most gentle birds I have ever had. What I miss most about her was her purr. When I stroked her she purred like a cat. If I ever got another quaker and had a choice in the sex I would choose a female again. But just because of how sweet and wonderful my little Jassy was.

I know someone who has had two male green quakers (if I am correct... though both passed for know fault of the owners), and now a blue quaker (a male also).
She prefers to keep male birds so as to keep out of that whole hormonal aggressive hen/egg laying complications. I can't say which is better myself as they are all individuals, in like cockatiels, there is no different in color. Quakers though, like many large conures, enjoy having a nestbox or something similar to sleep in as long as the bird doesn't take this area as a nesting site but rather a place to sleep. Normally, both males and females can enjoy this 'sleeping box'.
